2 slices of sourdough bread

1 cup cooked chicken breast, shredded (you can use rotisserie chicken for convenience)

½ cup marinara sauce

½ cup shredded mozzarella cheese

¼ cup grated Parmesan cheese

1 teaspoon Italian seasoning

1 tablespoon olive oil or butter

Fresh basil leaves for garnish (optional)

Instructions
 

Prepare the Filling: In a bowl, mix the shredded chicken with marinara sauce, Italian seasoning, and half of the mozzarella cheese. This will be your flavorful chicken parmesan filling.

    Assemble the Sandwich: Lay one slice of sourdough bread on a clean surface. Spoon the chicken mixture evenly over the bread, then sprinkle the remaining mozzarella and Parmesan cheese on top. Put the second slice of bread on top to create a sandwich.

      Heat the Pan: In a skillet, heat the olive oil or butter over medium heat until it’s hot but not smoking.

        Grill to Perfection: Carefully place the sandwich in the heated skillet. Grill for about 3-4 minutes on one side, or until golden brown. Press down lightly with a spatula to ensure an even grill.

          Flip and Melt: Carefully flip the sandwich over and grill for another 3-4 minutes or until the other side is golden and the cheese is melted. You can cover the pan with a lid for a minute to help the cheese melt faster.
