1 lb ground beef (80/20 blend for juiciness)

1/2 cup panko breadcrumbs

2 green onions, finely chopped

2 cloves garlic, minced

1 tablespoon ginger, grated

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon brown sugar

1 egg, beaten

1 teaspoon black pepper

1 teaspoon salt

For the Spicy Mayo Dip:

1/2 cup mayonnaise

2 tablespoons Sriracha (adjust to taste)

1 teaspoon rice vinegar

1 teaspoon sesame oil

1 teaspoon honey

1 tablespoon water (to thin out dip, optional)

Garnish:

Thinly sliced green onions

Sesame seeds

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Prepare the Meatball Mixture: In a large mixing bowl, combine the ground beef, panko breadcrumbs, chopped green onions, garlic, ginger, soy sauce, sesame oil, brown sugar, beaten egg, black pepper, and salt. Mix until just combined, being careful not to overmix.

      Shape the Meatballs: Using your hands, roll the meat mixture into 1-inch balls and place them on the prepared baking sheet, spacing them slightly apart.
