1 pound flank steak, thinly sliced against the grain

1/4 cup soy sauce

2 tablespoons sesame oil

2 tablespoons brown sugar

1 tablespoon gochujang (Korean chili paste)

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

2 green onions, finely chopped (plus extra for garnish)

1 tablespoon sesame seeds

1 red bell pepper, cut into large squares

1 small zucchini, cut into rounds

8-10 bamboo skewers (soaked in water for 30 minutes to prevent burning)

Salt and pepper, to taste

Instructions
 

Prepare the Marinade: In a mixing bowl, combine soy sauce, sesame oil, brown sugar, gochujang, minced garlic, grated ginger, and chopped green onions. Mix well until the sugar is dissolved.

    Marinate the Beef: Place the sliced flank steak in a zip-top bag or shallow dish. Pour the marinade over the beef, ensuring all pieces are well coated. Seal the bag or cover the dish, and refrigerate for at least 1 hour or preferably overnight for maximum flavor.

      Prepare the Skewers: Preheat your grill or grill pan over medium-high heat. While it's heating, thread marinated beef onto soaked bamboo skewers, alternating with pieces of bell pepper and zucchini, leaving a little space between each piece for even cooking.

        Season and Grill: Lightly season the skewers with salt and pepper. Grill the skewers for about 3-4 minutes on each side, or until the beef is cooked to your desired doneness and the vegetables are tender but still crisp.

          Garnish and Serve: Once cooked, remove the skewers from the grill and sprinkle with sesame seeds and additional chopped green onions for garnish. Serve hot with steamed rice and dipping sauces (like ssamjang) on the side.
