Ingredients

1 pound ground beef (or ground turkey)

1 cup fresh breadcrumbs

1/4 cup grated Parmesan cheese

1/4 cup finely chopped green onions

2 cloves garlic, minced

1 large egg

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon ground ginger

1 cup teriyaki sauce (store-bought or homemade)

1 cup fresh pineapple chunks (cut into bite-sized pieces)

Sesame seeds (for garnish)

Fresh cilantro or parsley (for garnish)

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C). Line a baking sheet with parchment paper for easier clean-up.

Prepare the Meatball Mixture: In a large mixing bowl, combine the ground beef (or turkey), fresh breadcrumbs, grated Parmesan cheese, chopped green onions, minced garlic, egg, salt, pepper, and ground ginger. Use your hands to mix everything together until well-combined but do not overmix.

Form the Meatballs: Shape the mixture into 1-inch meatballs, rolling them gently between your palms. Place the meatballs evenly spaced on the prepared baking sheet.

Bake the Meatballs: Bake the meatballs in the preheated oven for about 15 minutes, or until they are browned on the outside and cooked through (internal temperature should reach 165°F or 74°C).

Prepare the Teriyaki Sauce: While the meatballs are baking, pour the teriyaki sauce into a medium saucepan and bring it to a gentle simmer over medium heat.

Add Pineapple: Once the teriyaki sauce is simmering, add the pineapple chunks and let them cook for about 3-4 minutes until they are warmed through and slightly caramelized in the sauce.

Combine Meatballs and Sauce: When the meatballs are finished baking, carefully transfer them to the saucepan with the teriyaki sauce and pineapple. Toss gently until the meatballs are well-coated with the sauce.

Serve: Transfer the teriyaki meatballs to a serving platter. Garnish with sesame seeds and fresh cilantro or parsley for a burst of color and flavor.

Enjoy: Serve your juicy pineapple teriyaki meatballs over steamed rice, quinoa, or even noodles for a complete meal!
