Juicy Citrus Mojo Pork Tacos

For the Mojo Marinade:

1 cup fresh orange juice

1/2 cup fresh lime juice

6 cloves garlic, minced

1/4 cup fresh cilantro, chopped

2 teaspoons ground cumin

1 teaspoon dried oregano

1 teaspoon smoked paprika

1/2 teaspoon red pepper flakes

Salt and pepper to taste

2 pounds boneless pork shoulder or pork loin

For the Tacos:

8 small corn or flour tortillas

1 cup diced pineapple (fresh or canned)

1/2 red onion, finely chopped

1 avocado, sliced

1 cup cucumber, diced

Fresh cilantro leaves for garnish

Lime wedges for serving

Instructions
 

Prepare the Mojo Marinade: In a large bowl, whisk together the orange juice, lime juice, minced garlic, chopped cilantro, cumin, oregano, smoked paprika, red pepper flakes, salt, and pepper.

    Marinate the Pork: Place the pork into a resealable plastic bag or a shallow dish and pour the marinade over the top. Seal the bag or cover the dish and marinate in the refrigerator for at least 4 hours, preferably overnight for maximum flavor.

      Cook the Pork: Preheat your grill or slow cooker. If using a grill, preheat it to medium-high heat. If using a slow cooker, set it to low. Remove the pork from the marinade (discard the marinade), and grill the pork for about 6-8 minutes per side until fully cooked and tender. If using a slow cooker, cook for 6-8 hours on low until the pork is fork-tender.

        Shred the Pork: Once cooked, allow the pork to rest for 10-15 minutes. Then, shred it with two forks in a large bowl until it reaches your desired texture.

          Warm the Tortillas: In a skillet over medium heat, warm the tortillas for about 30 seconds per side or until they are pliable and slightly charred.

            Assemble the Tacos: On each tortilla, add a generous scoop of the shredded pork, followed by diced pineapple, chopped red onion, slices of avocado, and diced cucumber.

              Garnish and Serve: Top the tacos with fresh cilantro leaves and serve with lime wedges on the side for an extra burst of citrus flavor.
