Italian Sausage Stuffed Peppers

4 large bell peppers (any color)

1 pound Italian sausage (mild or spicy, your preference)

1 cup cooked rice (white or brown)

1 small onion, diced

2 cloves garlic, minced

1 can (14 oz) diced tomatoes (with juices)

1 cup shredded mozzarella cheese

1 teaspoon Italian seasoning

½ teaspoon red pepper flakes (optional for extra heat)

Salt and pepper to taste

2 tablespoons olive oil

Fresh basil for garnish (optional)

Instructions
 

Preheat the oven to 375°F (190°C).

    Prepare the peppers: Carefully cut the tops off the bell peppers and remove the seeds and membranes. Lightly brush the outside of each pepper with olive oil and place them upright in a baking dish or on a lined baking tray.

      Cook the sausage: In a large skillet over medium heat, add the olive oil. Once heated, add the diced onion and sauté for 2-3 minutes until translucent. Then add the minced garlic and cook for an additional 1 minute until fragrant.

        Add sausage: Crumble the Italian sausage into the skillet. Cook until browned and fully cooked, about 5-7 minutes. Drain excess fat if necessary.

          Combine filling: In a large mixing bowl, combine the cooked sausage, cooked rice, diced tomatoes (with juices), Italian seasoning, red pepper flakes (if using), and half of the mozzarella cheese. Season with salt and pepper to taste. Mix well to combine.

            Stuff the peppers: Generously spoon the sausage mixture into each of the prepared bell peppers, pressing down gently to pack them. Top the stuffed peppers with the remaining mozzarella cheese.

              Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

                Cool and garnish: Once baked, remove the stuffed peppers from the oven and let them cool for a few minutes. Garnish with fresh basil before serving.
