Italian Meatball Subs with Mozzarella

1 lb ground beef

1/2 lb ground pork

1 cup breadcrumbs

1/4 cup grated Parmesan cheese

1/4 cup fresh parsley, chopped

2 cloves garlic, minced

1 large egg

1 tsp dried oregano

1 tsp salt

1/2 tsp black pepper

2 cups marinara sauce (homemade or store-bought)

4 sub rolls

8 oz fresh mozzarella cheese, sliced

Extra olive oil for drizzling

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat your oven to 375°F (190°C).

    Prepare the meatballs: In a large bowl, combine the ground beef, ground pork, breadcrumbs, Parmesan cheese, parsley, minced garlic, egg, oregano, salt, and black pepper. Mix until just combined, being careful not to overwork the meat.

      Shape the meatballs: Form the mixture into 12 equal-sized meatballs, about 1.5 inches in diameter.

        Cook the meatballs: In a large skillet, heat a drizzle of olive oil over medium heat. Add the meatballs in batches, browning them on all sides for about 5-7 minutes. Remove from skillet and set aside.

          Simmer in marinara: In the same skillet, pour in the marinara sauce and bring to a gentle simmer. Return the browned meatballs to the skillet, coating them in the sauce. Cover and simmer for about 10-15 minutes until cooked through, reaching an internal temperature of 160°F (70°C).

            Prepare the sub rolls: Place the sub rolls on a baking tray. Cut them lengthwise without completely separating the halves. Drizzle a bit of olive oil inside each roll.

              Assemble the subs: Using tongs, place 3 meatballs in each sub roll, spooning extra marinara sauce over the meatballs. Top each sub with 2 slices of fresh mozzarella cheese.

                Bake to perfection: Pop the assembled subs into the oven and bake for 10-12 minutes, or until the cheese is melted and bubbly.
