Ingredients

For the Meatballs:

1 pound ground beef (or a mix of beef and pork)

½ cup breadcrumbs (preferably panko)

2 green onions, finely chopped

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 large egg, beaten

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon brown sugar

1 teaspoon salt

½ teaspoon black pepper

For the Korean BBQ Glaze:

¼ cup gochujang (Korean chili paste)

2 tablespoons soy sauce

1 tablespoon rice vinegar

2 tablespoons honey or maple syrup

1 tablespoon sesame oil

1 teaspoon minced garlic

1 teaspoon sesame seeds (for garnish)

Fresh cilantro or additional green onions (for garnish)

Instructions

Prepare the Meatball Mixture: In a large mixing bowl, combine the ground meat, breadcrumbs, chopped green onions, minced garlic, grated ginger, beaten egg, soy sauce, sesame oil, brown sugar, salt, and black pepper. Use your hands or a spatula to mix until well incorporated.

Form the Meatballs: Preheat your oven to 400°F (200°C). Scoop out about 2 tablespoons of the mixture and roll into balls. Place the shaped meatballs on a lined baking sheet, making sure to leave space between each one.

Bake the Meatballs: Bake the meatballs in the preheated oven for about 15-20 minutes, or until they are cooked through and have a nice golden brown exterior.

Prepare the Korean BBQ Glaze: While the meatballs are baking, whisk together the gochujang, soy sauce, rice vinegar, honey (or maple syrup), sesame oil, and minced garlic in a small saucepan over medium heat. Bring the mixture to a simmer and let it thicken slightly, about 3-5 minutes. Remove from heat.

Glaze the Meatballs: Once the meatballs are done baking, remove them from the oven and drizzle or toss them with the Korean BBQ glaze until evenly coated.

Serve: Transfer the meatballs to a serving platter. Garnish with sesame seeds and fresh cilantro or additional green onions. Serve with toothpicks as an appetizer or over a bed of rice as a main dish.
