1 lb boneless, skinless chicken thighs, diced

1 teaspoon salt

1 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon paprika

1 tablespoon olive oil

1/2 cup honey

1 teaspoon red pepper flakes (adjust for desired heat)

1 tablespoon apple cider vinegar

For the Bowls:

2 cups cooked jasmine rice (or your choice of rice)

1 cup fresh spinach, chopped

1 cup cherry tomatoes, halved

1 avocado, sliced

1/4 cup red onion, thinly sliced

Fresh cilantro, for garnish (optional)

Lime wedges, for serving

Prepare the Chicken: In a bowl, combine the diced chicken thighs with salt, black pepper, garlic powder, and paprika. Mix well to coat the chicken evenly.
