For the Chicken Marinade:

1 lb chicken thighs (boneless, skinless)

2 tablespoons olive oil

1 tablespoon soy sauce

2 tablespoons hot honey (plus more for drizzling)

1 teaspoon garlic powder

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

For the Bowl:

1 cup uncooked rice (jasmine or basmati)

2 cups chicken broth (or water)

1 cups chopped broccoli florets

1 red bell pepper, sliced

1 cup corn (fresh or frozen)

½ avocado, sliced

¼ cup green onions, chopped

2 tablespoons sesame seeds (optional)

Fresh cilantro for garnish (optional)

Instructions
 

Marinate the Chicken: In a mixing bowl, combine olive oil, soy sauce, hot honey, garlic powder, smoked paprika, salt, and pepper. Add the chicken thighs, making sure they are well-coated. Cover and let marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).

    Cook the Rice: Rinse the rice under cold water until the water runs clear. In a medium saucepan, combine the rice and chicken broth (or water). Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the liquid is absorbed and the rice is tender. Remove from heat and let it sit, covered, for 5 minutes.

      Cook the Chicken: Heat a non-stick skillet over medium-high heat. Remove the chicken from the marinade, allowing excess to drip off. Add the chicken to the skillet and cook for about 6-7 minutes on each side, or until fully cooked and nicely browned. You can brush with additional hot honey during the last minute of cooking for an extra glaze.

        Sauté the Veggies: In the same skillet, add the broccoli, red bell pepper, and corn. Sauté for about 4-5 minutes, until the vegetables are tender but still vibrant and crunchy. Season lightly with salt and pepper.

          Assemble the Bowls: Fluff the cooked rice with a fork and divide it among four bowls. Top each bowl with the sautéed veggies, slices of hot honey chicken, and avocado. Drizzle additional hot honey over the top for a sweet and spicy kick.
