1 lb chicken breast tenders

1/2 cup honey

1/4 cup Dijon mustard

1/4 cup whole grain mustard

1 tsp garlic powder

1 tsp onion powder

1 tsp smoked paprika

Salt and pepper to taste

1 cup all-purpose flour

2 large eggs, beaten

2 cups panko bread crumbs

1/4 cup olive oil (for cooking)

Prepare the Marinade: In a mixing bowl, whisk together honey, Dijon mustard, whole grain mustard, garlic powder, onion powder, smoked paprika, salt, and pepper. Reserve 1/4 cup of this mixture for dipping sauce later.

    Marinate the Chicken: Place the chicken tenders in a large resealable bag or shallow dish. Pour the remaining marinade over the chicken, ensuring they are well-coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 2 hours for deeper flavor.

      Set Up Breading Station: In three shallow dishes, set out the flour in one, the beaten eggs in another, and the panko bread crumbs in the last dish. Season the flour with a pinch of salt and pepper.

        Bread the Chicken: Remove the marinated chicken from the refrigerator. One at a time, dredge each tender in the flour, shaking off the excess. Dip in the beaten eggs, then coat thoroughly with panko bread crumbs, pressing gently to ensure they stick.

          Cook the Chicken Tenders: In a large skillet, heat olive oil over medium heat. Once hot, add the breaded chicken tenders, frying in batches if necessary. Cook for about 4-5 minutes per side, or until they are golden brown and cooked through (internal temperature should reach 165°F).
