When it comes to baking chicken drumsticks, proper spacing on the wire rack is essential. This allows hot air to circulate around the chicken, ensuring even cooking and optimal crispiness. Place the drumsticks on the rack so that they are not touching each other. This spacing promotes air circulation, preventing steam from getting trapped, which can result in soggy skin.

Ingredients

10 chicken drumsticks

1/4 cup honey

1/4 cup Dijon mustard

2 tablespoons apple cider vinegar

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon dried thyme

1 teaspoon black pepper

1/2 teaspoon salt

Fresh parsley, chopped (for garnish)

Instructions

Preheat Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with aluminum foil and place a wire rack on top. This will help the chicken cook evenly and get crispy.

Make the Marinade: In a medium bowl, whisk together the honey, Dijon mustard, apple cider vinegar, olive oil, minced garlic, smoked paprika, dried thyme, black pepper, and salt until well combined.

Marinate the Chicken: Place the chicken drumsticks in a large resealable plastic bag or a bowl. Pour the honey mustard marinade over the chicken, making sure each drumstick is well coated. Seal the bag or cover the bowl and refrigerate for at least 30 minutes, or preferably for a few hours to let the flavors meld.

Arrange for Baking: After marinating, remove the chicken from the fridge. Shake off any excess marinade and arrange the drumsticks on the wire rack on the baking sheet. Reserve the leftover marinade for basting.

Bake the Drumsticks: Bake the chicken in the preheated oven for about 35-40 minutes, or until the skin is golden brown and crispy, and the internal temperature reads 165°F (75°C). Baste the drumsticks with the reserved marinade halfway through the baking time for extra flavor.

Broil for Crispiness (Optional): For an extra crispy skin, switch the oven to broil mode and cook the drumsticks for an additional 2-3 minutes, keeping a close eye to prevent burning.

Serve: Once cooked, remove the drumsticks from the oven. Let them rest for 5 minutes before serving. Garnish with freshly chopped parsley for a pop of color and add any remaining honey mustard sauce on the side.
