1 lb (450g) boneless, skinless chicken breasts, sliced into thin strips

2 tablespoons olive oil

1 tablespoon honey

Juice of 2 limes

Zest of 1 lime

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 bell pepper (red, yellow, or green), sliced

1 onion, sliced

Tortillas (flour or corn, for serving)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Optional toppings: avocado, sour cream, salsa, cheese

Instructions
 

Marinate the Chicken: In a large bowl, combine the olive oil, honey, lime juice, lime zest, chili powder, cumin, garlic powder, onion powder, salt, and pepper. Mix well. Add the chicken strips and toss to coat. Cover and marinate for at least 30 minutes (or up to 2 hours in the refrigerator for deeper flavor).

    Prepare the Vegetables: While the chicken is marinating, slice the bell pepper and onion. Set them aside.

      Cook the Chicken: Heat a large skillet or frying pan over medium-high heat. Add the marinated chicken to the pan, including any excess marinade. Cook for about 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through (internal temperature should reach 165°F/75°C). Remove the chicken from the pan and set aside.

        Sauté the Vegetables: In the same pan, add the sliced bell pepper and onion. Sauté for about 3-4 minutes until they are tender but still slightly crisp.

          Combine and Heat Through: Return the cooked chicken to the pan with the sautéed vegetables. Stir everything together and cook for an additional 2 minutes to heat through and allow the flavors to meld.

            Serve: Warm the tortillas in a separate pan or microwave. Serve the chicken and vegetable mixture in tortillas, garnished with fresh cilantro and lime wedges. Add any optional toppings as desired.
