2 medium acorn squashes

4 tablespoons unsalted butter, melted

¼ cup honey

1 teaspoon ground cinnamon

¼ teaspoon nutmeg

¼ teaspoon salt

¼ teaspoon black pepper

1 tablespoon olive oil

Fresh thyme leaves for garnish (optional)

Chopped pecans or walnuts for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Squash: Slice the acorn squashes in half lengthwise and scoop out the seeds using a spoon. If the squash is tough to cut, microwave it for 2-3 minutes to soften it slightly.

      Make the Honey Butter Mixture: In a small bowl, whisk together the melted butter, honey, cinnamon, nutmeg, salt, and black pepper until well combined.

        Coat the Squash: Lay the acorn squash halves cut side up on a baking sheet. Drizzle a little olive oil over each half and rub it in to coat evenly. Then, evenly distribute the honey butter mixture over the surface of each squash half.

          Roast: Place the baking sheet in the preheated oven and roast for about 25-30 minutes, or until the squash is tender and caramelized. You can check for doneness by poking a fork into the flesh; it should be soft.
