For the Chicken Stew:

2 lbs chicken thighs, boneless, skinless, cut into bite-sized pieces

1 medium onion, diced

3 cloves garlic, minced

4 medium carrots, sliced

3 celery stalks, diced

4 cups chicken broth

1 cup frozen peas

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 bay leaf

Salt and pepper to taste

2 tablespoons olive oil

1 tablespoon butter

For the Dumplings:

2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon dried basil

1 teaspoon dried parsley

½ teaspoon salt

1 cup buttermilk

2 tablespoons butter, melted

Fresh parsley, for garnish

Instructions
 

Sauté the Chicken:

    In a large pot or Dutch oven, heat olive oil and butter over medium heat. Once hot, add the diced onion and minced garlic. Sauté for about 3-4 minutes until the onion is translucent.

      Brown the Chicken:

        Add the cut chicken pieces to the pot. Season with salt and pepper. Cook until the chicken is browned on all sides, about 6-7 minutes.

          Add Vegetables and Broth:

            Stir in the carrots and celery, then pour in the chicken broth. Add the thyme, rosemary, bay leaf, and bring to a simmer. Cover and let it cook for about 20 minutes, until the vegetables are tender and the chicken is cooked through.

              Make the Dumpling Dough:

                In a mixing bowl, combine the flour, baking powder, dried basil, dried parsley, and salt. Stir until well blended. Add the buttermilk and melted butter, mixing until just combined. Avoid overmixing to keep the dumplings light.

                  Incorporate Peas:

                    After 20 minutes of simmering, stir in the frozen peas and cook for an additional 5 minutes. Remove the bay leaf.

                      Cook the Dumplings:

                        Drop spoonfuls (about 2 tablespoons each) of dumpling batter on top of the simmering chicken stew. Cover the pot and let them steam for 15-20 minutes, or until they are fluffy and cooked through.

                          Serve:

                            Once the dumplings are ready, gently ladle the chicken stew into bowls. Garnish with fresh parsley and serve hot. Enjoy your cozy meal!
