1 lb (450g) beef sirloin, thinly sliced against the grain

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil (divided)

1 medium onion, sliced

2 cloves garlic, minced

1 teaspoon ginger, freshly grated

1 bell pepper (red or green), sliced

1 cup broccoli florets

1 cup sugar snap peas, trimmed

1 cup carrots, julienned

2 green onions, chopped

1 tablespoon sesame oil

Cooked rice or noodles, for serving

Marinate the Beef: In a medium bowl, combine the sliced beef with soy sauce, oyster sauce, and cornstarch. Mix well to ensure the beef is evenly coated. Let it marinate for at least 15-20 minutes while you prepare the vegetables.

    Prep the Veggies: While the beef is marinating, wash and slice all your vegetables. Make sure to have everything ready to go, as stir-frying happens quickly.

      Heat the Oil: In a large wok or non-stick skillet, heat 1 tablespoon of vegetable oil over medium-high heat. Add the marinated beef in a single layer and let it sear for about 2-3 minutes without stirring, until it develops a nice brown color.

        Cook the Beef: Stir the beef to ensure it cooks evenly. Cook for an additional 2 minutes or until just cooked through. Remove the beef from the pan and set aside on a plate.
