Homemade Zucchini Pizza

2 medium zucchinis

1 cup marinara sauce

1 ½ cups shredded mozzarella cheese

½ cup grated Parmesan cheese

1 tsp dried oregano

1 tsp garlic powder

½ tsp red pepper flakes (optional)

1 bell pepper, diced

½ cup sliced black olives

Fresh basil leaves for garnish

Olive oil for drizzling

Salt and pepper to taste

Instructions
 

Preheat your oven to 400°F (200°C).

    Wash and dry the zucchinis. Slice them into thick rounds, approximately ½ inch thick.

      Arrange the zucchini rounds on a baking sheet lined with parchment paper. Drizzle them lightly with olive oil and sprinkle with salt and pepper.

        Roast the zucchini in the preheated oven for about 15-20 minutes, until they are slightly tender and starting to brown.

          Remove the zucchini from the oven and let them cool slightly. Then, top each round with a spoonful of marinara sauce, spreading it evenly.

            Sprinkle a layer of shredded mozzarella cheese over the sauce, followed by a sprinkle of grated Parmesan cheese.

              Add the diced bell pepper and black olives on top of the cheese. For an extra kick, sprinkle the oregano, garlic powder, and red pepper flakes if desired.

                Return the zucchini pizzas to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

                  Remove from the oven and let cool for a couple of minutes. Garnish with fresh basil leaves before serving.
