1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

1/2 cup cornstarch

1/4 cup all-purpose flour

1 teaspoon salt

1 teaspoon black pepper

1 teaspoon garlic powder

1/2 teaspoon red pepper flakes (adjust to taste)

1/4 cup vegetable oil (for frying)

2 cloves garlic, minced

1 tablespoon fresh ginger, minced

1/2 cup soy sauce

1/4 cup rice vinegar

1/3 cup honey

2 tablespoons hoisin sauce

1 tablespoon sesame oil

1 teaspoon cornstarch mixed with 1 tablespoon water (for thickening)

Snipped green onions and sesame seeds for garnish

Prepare Chicken: In a mixing bowl, combine the cornstarch, flour, salt, black pepper, garlic powder, and red pepper flakes. Toss the chicken thighs in this mixture until they are well-coated. Let them sit for about 15 minutes to absorb flavors and form a nice crust.

    Fry the Chicken: In a large skillet or wok, heat the vegetable oil over medium-high heat. Once the oil is hot, carefully add the coated chicken pieces in batches, ensuring not to crowd the pan. Fry for about 5-7 minutes or until golden brown and crispy. Remove with a slotted spoon and let drain on paper towels.

      Make the Sauce: In the same pan, remove excess oil leaving about 2 tablespoons to sauté. Add minced garlic and ginger, cooking for about 30 seconds until fragrant.
