Homemade Chicken Parmesan Sliders

For the Chicken:

1 pound boneless, skinless chicken breasts

1 cup all-purpose flour

2 large eggs

1 cup Italian breadcrumbs

½ cup grated Parmesan cheese

1 tsp garlic powder

1 tsp dried oregano

Salt and pepper to taste

Olive oil for frying

For the Slider Assembly:

12 slider rolls (brioche or Hawaiian)

1 cup marinara sauce

1 ½ cups shredded mozzarella cheese

Fresh basil leaves for garnish

Optional: crushed red pepper flakes for extra heat

Instructions
 

Prepare the Chicken:

    - Begin by preheating your oven to 375°F (190°C).

      - Slice the chicken breasts in half horizontally to create thinner cutlets. This will help them cook evenly and fit well in the sliders.

        - Season the flour with salt, pepper, garlic powder, and oregano in a shallow dish.

          - In another bowl, beat the two eggs.

            - In a third bowl, mix the breadcrumbs with the grated Parmesan cheese.

              Bread the Chicken:

                - Dredge each chicken cutlet in the seasoned flour, shaking off the excess.

                  - Dip it into the beaten eggs, allowing any excess to drip off.

                    - Finally, coat it with the breadcrumb and Parmesan mixture, pressing gently to adhere.

                      Fry the Chicken:

                        - Heat a generous amount of olive oil in a large skillet over medium heat.

                          - Once hot, add the breaded chicken, cooking in batches if necessary, until golden brown on each side (about 4-5 minutes per side).

                            - Transfer the fried chicken onto a paper towel-lined plate to absorb excess oil.

                              Assemble the Sliders:

                                - Cut the slider rolls in half. Place the bottom halves on a baking sheet.

                                  - Spread a spoonful of marinara sauce on each bottom half.

                                    - Layer on the crispy chicken cutlets, followed by a generous amount of shredded mozzarella cheese.

                                      - Top each with a basil leaf and add the top half of the slider roll.

                                        Bake the Sliders:

                                          - Lightly brush the tops of the slider rolls with olive oil or melted butter, then sprinkle a bit more grated Parmesan on top if desired.

                                            - Bake in the preheated oven for about 10-15 minutes, or until the cheese is melted and the tops are golden brown.

                                              Serve:

                                                - Remove from the oven and allow to cool slightly. Serve with extra marinara sauce on the side for dipping. Optionally, sprinkle crushed red pepper flakes for some heat.
