Ingredients

1 cup pumpkin puree (homemade or canned)

1 cup heavy cream

1/2 cup whole milk

1/2 cup maple syrup

3 large eggs

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/4 teaspoon salt

Whipped cream (for serving, optional)

Crushed pecans or walnuts (for garnish, optional)

Instructions

Preheat the Oven: Preheat your oven to 325°F (160°C). Prepare a 9x9-inch baking dish by placing it into a larger baking pan.

Make the Custard Mixture: In a large mixing bowl, combine pumpkin puree, heavy cream, whole milk, and maple syrup. Whisk together until well combined and smooth.

Add Flavorings: Add the eggs one at a time, whisking well after each addition. Then, mix in the vanilla extract, cinnamon, nutmeg, ginger, and salt until all ingredients are fully blended.

Strain for Smoothness (Optional): For an ultra-smooth custard, you may strain the mixture through a fine-mesh sieve into another bowl to remove any lumps.

Pour and Prepare for Baking: Pour the custard mixture into the prepared baking dish. Carefully add hot water to the larger pan until it reaches halfway up the sides of the custard dish, creating a water bath that helps the custard cook evenly.

Bake: Place the pans in the preheated oven and bake for 45-55 minutes, or until the custard is set and only slightly jiggles in the center.

Cool and Chill: Once baked, remove from the oven and let it cool to room temperature. After cooling, cover with plastic wrap and refrigerate for at least 2 hours or until well chilled.

Serve: When ready to serve, cut the custard into squares. Optional: top with whipped cream and sprinkle with crushed pecans or walnuts for added crunch and flavor.
