High-Protein Greek Yogurt Chicken Salad Wraps

2 cups cooked chicken breast, shredded or diced

1 cup plain Greek yogurt

1/4 cup mayonnaise (optional for creaminess)

1/2 cup celery, finely chopped

1/2 cup red grapes, halved

1/4 cup red onion, finely chopped

1/4 cup walnuts or almonds, chopped (optional)

1 tbsp Dijon mustard

1 tbsp fresh lemon juice

1 tsp dried dill or fresh dill

Salt and pepper, to taste

4 large whole wheat or spinach tortillas

Fresh spinach or lettuce leaves, for wrapping

Instructions
 

Prepare the Chicken: If not already cooked, grill or boil the chicken breasts until fully cooked, then shred or dice into bite-sized pieces.

    Make the Dressing: In a large mixing bowl, combine the Greek yogurt, mayonnaise (if using), Dijon mustard, lemon juice, dill, salt, and pepper. Mix well until the dressing is smooth.

      Combine Ingredients: Add the shredded chicken, celery, red grapes, red onion, and nuts (if using) to the bowl. Gently fold all the ingredients together to coat them evenly with the dressing.

        Taste and Adjust: Taste the chicken salad mixture and add more salt, pepper, or lemon juice if desired. Adjust the seasoning according to your preference.

          Assemble the Wraps: Lay out the tortillas on a flat surface. Place a few spinach or lettuce leaves in the center of each tortilla and top with a generous scoop of the chicken salad mixture.

            Wrap the Tortillas: Fold in the sides of each tortilla and then roll from the bottom up to enclose the filling. Press gently to keep everything together.

              Serve: Cut the wraps in half and enjoy immediately or wrap in parchment paper for a portable meal.
