Herb-Infused Chicken Salad

2 cups cooked chicken breast, shredded or diced

1 cup Greek yogurt (plain)

1 tablespoon Dijon mustard

1 tablespoon apple cider vinegar

2 tablespoons olive oil

1 cup celery, finely chopped

1/2 cup red onion, finely chopped

1/2 cup cucumber, diced

1/4 cup fresh parsley, chopped

1/4 cup fresh dill, chopped

1/4 cup fresh basil, chopped

Salt and pepper, to taste

1/4 teaspoon garlic powder (optional)

Mixed greens or lettuce for serving (optional)

Instructions
 

Prepare the Chicken: If you haven’t done so already, cook the chicken breast by poaching, baking, or grilling, and then shred or dice it into bite-sized pieces.

    Make the Dressing: In a large mixing bowl, combine Greek yogurt, Dijon mustard, apple cider vinegar, and olive oil. Whisk them together until smooth. Season the dressing with salt, pepper, and garlic powder if desired. Adjust acidity by adding more vinegar to suit your taste.

      Combine Ingredients: To the dressing, add the shredded chicken, chopped celery, red onion, cucumber, parsley, dill, and basil. Gently fold the ingredients together until well coated with the dressing. Be careful not to shred the chicken further.

        Chill the Salad: Cover the bowl with plastic wrap or a lid and let the chicken salad chill in the refrigerator for at least 30 minutes. This allows the flavors to meld beautifully.
