2 to 3 pounds pork loin

1 tablespoon olive oil

3 cloves garlic, minced

1 teaspoon fresh rosemary, chopped

1 teaspoon fresh thyme, chopped

1 teaspoon fresh parsley, chopped

1 teaspoon Dijon mustard

Salt and pepper, to taste

2 apples (Granny Smith or Honeycrisp), cored and sliced

1 medium onion, sliced

1 cup chicken broth

1 tablespoon honey

1 tablespoon apple cider vinegar

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Herb Mixture: In a small bowl, combine the minced garlic, rosemary, thyme, parsley, olive oil, Dijon mustard, salt, and pepper. Mix well to form a paste.

      Prepare the Pork Loin: Pat the pork loin dry with paper towels. Season generously with salt and pepper. Use a sharp knife to make shallow cuts across the surface of the pork loin (this allows for better flavor absorption).

        Crust the Pork: Rub the herb mixture all over the surface of the pork loin, making sure to get it into the cuts you made.

          Sear the Pork: In a large skillet over medium-high heat, add a little olive oil and sear the pork loin on all sides until golden brown (about 3-4 minutes per side). This step locks in the juices.

            Prepare the Apples and Onions: In a separate baking dish, combine the sliced apples and onions. Drizzle with honey and apple cider vinegar, then toss to coat evenly.

              Combine Ingredients: Place the seared pork loin on top of the apple and onion mixture in the baking dish. Pour the chicken broth into the dish around the pork (not over it), which will help keep it moist while roasting.

                Roast the Pork: Transfer the baking dish to the preheated oven and roast for approximately 1 hour or until the internal temperature of the pork reaches 145°F (63°C). Baste the pork with the pan juices halfway through cooking.

                  Rest and Serve: Once cooked, remove the pork from the oven and let it rest for at least 10-15 minutes before slicing. This helps the juices redistribute, keeping the meat tender. Slice the pork and serve it with the roasted apples and onions drizzled with the pan juices.
