Hearty Turkey and Vegetable Chili in 30 Minutes

1 pound ground turkey

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper (any color), diced

1 jalapeño, seeded and minced (adjust for heat preference)

1 zucchini, diced

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) kidney beans, drained and rinsed

1 can (14.5 oz) diced tomatoes with green chilies

1 cup corn kernels (fresh or frozen)

2 tablespoons chili powder

1 tablespoon cumin

1 teaspoon smoked paprika

Salt and pepper to taste

2 tablespoons olive oil

Fresh cilantro, for garnish

Sour cream or Greek yogurt, for serving (optional)

Shredded cheese, for serving (optional)

Instructions
 

Sauté the Base: Heat the olive oil in a large pot over medium heat. Add the diced onion and minced garlic. Sauté for 2-3 minutes until the onion is translucent.

    Brown the Turkey: Add the ground turkey to the pot. Cook, stirring occasionally, for about 5-7 minutes, breaking it apart with a wooden spoon, until it’s no longer pink.

      Add Veggies: Stir in the diced bell pepper, jalapeño, and zucchini. Cook for another 3-4 minutes until the vegetables start to soften.

        Spice It Up: Sprinkle in the chili powder, cumin, smoked paprika, along with salt and pepper to taste. Stir well to combine and cook for 1-2 minutes to toast the spices.

          Mix in the Beans and Tomatoes: Add the black beans, kidney beans, diced tomatoes with green chilies, and corn. Stir everything together until well combined.

            Simmer: Bring the chili to a gentle boil. Reduce the heat and let it simmer for 10 minutes, uncovered, stirring occasionally.

              Taste and Adjust: Taste the chili and adjust seasoning if necessary, adding more salt, pepper, or spices as desired.

                Garnish and Serve: Ladle the chili into bowls and top with fresh cilantro, a dollop of sour cream or Greek yogurt, and shredded cheese if desired.
