Hearty Turkey and Sweet Potato Chili

1 lb ground turkey

2 medium sweet potatoes, peeled and diced (about 2 cups)

1 medium onion, chopped

2 cloves garlic, minced

1 red bell pepper, diced

2 cans (15 oz) black beans, rinsed and drained

1 can (14.5 oz) diced tomatoes with green chilies

1 can (15 oz) tomato sauce

2 cups chicken broth

2 tablespoons chili powder

1 tablespoon ground cumin

1 teaspoon smoked paprika

1 teaspoon salt (to taste)

½ teaspoon black pepper (to taste)

2 tablespoons olive oil

1 cup corn (fresh, frozen, or canned)

Optional toppings: avocado, fresh cilantro, lime wedges, shredded cheese, or sour cream

Instructions
 

Sauté the Base: In a large pot or Dutch oven, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and red bell pepper. Sauté for about 5 minutes, or until the vegetables are softened.

    Add Garlic and Turkey: Stir in the minced garlic and ground turkey, breaking the turkey apart with a spatula. Cook for about 7-8 minutes, or until the turkey is no longer pink.

      Incorporate Sweet Potatoes: Add the diced sweet potatoes to the pot. Stir to combine and let them cook for an additional 5 minutes.

        Mix in Remaining Ingredients: Pour in the diced tomatoes with green chilies, tomato sauce, black beans, corn, and chicken broth. Add the chili powder, cumin, smoked paprika, salt, and black pepper. Stir everything together until well combined.

          Simmer the Chili: Bring the mixture to a gentle boil, then reduce the heat to low. Cover the pot and let it simmer for 30-35 minutes, or until the sweet potatoes are tender and the chili has thickened to your liking. Stir occasionally to prevent sticking.
