Hearty Lentil and Sausage Stew

1 cup green or brown lentils, rinsed

1 lb Italian sausage (mild or spicy, based on preference), casings removed

1 medium onion, diced

2 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

1 bell pepper (red or green), diced

1 can (14 oz) diced tomatoes (with juices)

4 cups vegetable or chicken broth

1 tablespoon olive oil

1 teaspoon dried thyme

1 teaspoon smoked paprika

½ teaspoon cumin

Salt and pepper to taste

2 cups kale or spinach, chopped (optional)

Fresh parsley for garnish

Instructions
 

Sauté the Sausage: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it apart with a spoon. This should take about 5-7 minutes. Once cooked, remove the sausage with a slotted spoon and set it aside, leaving the rendered fat in the pot.

    Cook the Vegetables: In the same pot, add the diced onion, carrots, and celery. Sauté for about 5 minutes until the vegetables begin to soften. Stir in the diced bell pepper and garlic, and cook for an additional 2-3 minutes until fragrant.

      Add Lentils and Seasoning: Stir in the rinsed lentils, thyme, smoked paprika, cumin, salt, and pepper. Mix well to incorporate the spices with the vegetables.

        Combine with Broth and Tomatoes: Add the diced tomatoes (with their juices) and the vegetable or chicken broth to the pot. Bring the mixture to a boil, then reduce the heat to low and simmer.

          Simmer the Stew: Cover the pot and let it simmer for about 25-30 minutes or until the lentils are tender. Stir occasionally to prevent sticking.

            Finish with Greens: If you're adding kale or spinach, stir it in during the last 5 minutes of cooking, allowing it to wilt but retain its bright color.

              Adjust Seasoning: Taste and adjust seasoning with more salt and pepper if necessary.

                Serve and Garnish: Ladle the hearty stew into bowls and garnish with fresh parsley. Serve hot with crusty bread or over rice for a filling meal.
