1 pound beef chuck roast, diced into 1-inch cubes

2 tablespoons olive oil

1 large onion, chopped

3 cloves garlic, minced

3 medium carrots, diced

2 stalks celery, diced

1 cup mushrooms, sliced

1 cup pearl barley, rinsed

8 cups beef broth (low sodium recommended)

2 cups water

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 bay leaf

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Sear the Beef: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef cubes in batches to avoid overcrowding. Season with salt and pepper and sear until browned on all sides, about 5-7 minutes. Remove the beef and set aside.

    Sauté the Vegetables: In the same pot, add the chopped onion, carrots, celery, and mushrooms. Sauté for about 5-6 minutes or until the vegetables are softened. Add the minced garlic and cook for an additional minute, until fragrant.

      Deglaze and Combine: Return the seared beef to the pot. Pour in the beef broth and water, scraping the bottom of the pot to release any browned bits. Add the pearl barley, thyme, rosemary, and bay leaf. Stir to combine.

        Simmer: Bring the soup to a boil, then reduce the heat to low. Cover and let it simmer for about 1.5 to 2 hours, or until the beef is tender and the barley is cooked.

          Adjust Seasoning: Remove the bay leaf. Taste the soup and adjust the seasoning with more salt and pepper if necessary.
