4 large bell peppers (any color)

1 lb ground beef

1 cup cooked quinoa

1 small onion, diced

3 cloves garlic, minced

1 can (14.5 oz) diced tomatoes, drained

1 tablespoon tomato paste

1 teaspoon dried oregano

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup shredded cheddar cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Start by preheating your oven to 375°F (190°C).

    Prepare the Peppers: Cut the tops off the bell peppers and remove the seeds and membranes. Place them upright in a baking dish.

      Cook the Beef: In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula as it cooks. Drain excess fat.

        Sauté Aromatics: Add the diced onion and minced garlic to the skillet with the beef. Cook until softened, about 3-4 minutes.

          Mix in Ingredients: Stir in the cooked quinoa, diced tomatoes, tomato paste, oregano, cumin, smoked paprika, salt, and pepper. Cook for an additional 2-3 minutes until heated through.

            Stuff the Peppers: Spoon the beef and quinoa mixture into each bell pepper, packing it in gently.

              Top with Cheese: Sprinkle shredded cheddar cheese generously over the stuffed peppers.

                Bake: Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and beginning to brown.

                  Garnish and Serve: Once done, remove from the oven and let cool for a few minutes. Garnish with chopped fresh parsley before serving.
