4 medium zucchinis, sliced into half-moons

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon fresh thyme leaves (or 1/3 teaspoon dried thyme)

1 teaspoon fresh oregano leaves (or 1/3 teaspoon dried oregano)

Salt and pepper to taste

1 tablespoon fresh lemon juice

Zest of 1 lemon

2 tablespoons fresh parsley, chopped (for garnish)

Optional: a pinch of red pepper flakes for heat

Prep the Zucchini: Wash the zucchinis thoroughly. Cut off the ends and slice them into half-moon shapes about 1/4-inch thick for even cooking.

    Heat the Oil: In a large skillet, heat the olive oil over medium heat. Allow it to warm up for about 1 minute.

      Sauté the Garlic: Once the oil is heated, add the minced garlic. Sauté for about 30 seconds until fragrant but not browned. Keep an eye on it to avoid burning.
