2 cups rolled oats

1 cup almond milk (or any plant-based milk)

1/2 cup unsweetened applesauce

1 ripe banana, mashed

1/4 cup maple syrup (or honey)

1 tsp vanilla extract

1/2 tsp cinnamon

1/4 tsp salt

1 cup mixed berries (fresh or frozen)

1/4 cup chopped nuts (walnuts or almonds for added crunch)

1/4 cup flaxseed meal (optional, for added nutrition)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line an 8x8 inch baking dish with parchment paper, letting some hang over the sides for easy removal later.

    Mix Wet Ingredients: In a large mixing bowl, combine the almond milk, unsweetened applesauce, mashed banana, maple syrup, and vanilla extract. Stir until well blended.

      Add Dry Ingredients: To the wet mixture, add the rolled oats, cinnamon, salt, and flaxseed meal (if using). Mix until all ingredients are evenly incorporated.

        Fold in Berries and Nuts: Carefully fold in the mixed berries and chopped nuts. Ensure that the berries are evenly distributed throughout the mixture.

          Transfer to Baking Dish: Pour the oatmeal mixture into the prepared baking dish, spreading it out evenly with a spatula.

            Bake: Place in the preheated oven and bake for 25-30 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean.

              Cool and slice: Allow the bars to cool in the baking dish for about 10 minutes. Using the parchment paper, lift the entire block out of the dish and place it on a cutting board. Let it cool completely before slicing into bars.

                Store or Serve: Enjoy immediately or store in an airtight container in the fridge for up to a week. These bars can also be frozen for longer storage—simply wrap each bar individually in plastic wrap!
