Ingredients

1 cup rolled oats

1/2 cup natural peanut butter (or almond butter)

1/4 cup honey (or maple syrup for vegan option)

1/4 cup cocoa powder

1/2 teaspoon vanilla extract

1/4 teaspoon sea salt

1/3 cup dark chocolate chips (dairy-free if needed)

1/4 cup chopped nuts (walnuts or almonds work great)

Optional: 2 tablespoons chia seeds or ground flaxseed for added nutrition

Instructions

Mix the Base: In a large mixing bowl, combine the rolled oats, cocoa powder, and sea salt. Stir well to combine.

Add Wet Ingredients: In another bowl, mix together the peanut butter, honey, and vanilla extract until smooth. If the peanut butter is too thick, you can gently warm it in the microwave for about 10-15 seconds to make it easier to mix.

Combine Ingredients: Pour the peanut butter mixture into the dry ingredients and mix thoroughly until everything is combined. If using, fold in the chia seeds or ground flaxseed for added nutrients.

Add Chocolate and Nuts: Gently fold in the dark chocolate chips and chopped nuts until evenly distributed throughout the mixture.

Shape the Cookies: Using a spoon or your hands, scoop out small portions of the mixture (about 1 tablespoon each). Shape them into cookies and place them on a parchment-lined baking sheet.

Chill: Once all the cookie dough is shaped, place the baking sheet in the refrigerator for at least 30 minutes to allow the cookies to set.

Enjoy: After chilling, the cookies are ready to eat! Store any leftovers in an airtight container in the fridge for up to a week.
