Ingredients

1 cup rolled oats

1/2 cup almond butter (or any nut butter of your choice)

1/4 cup pure maple syrup or honey

2 tablespoons matcha green tea powder

1/4 cup chia seeds

1/4 cup unsweetened shredded coconut

1/2 teaspoon vanilla extract

Pinch of sea salt

Optional: 1/4 cup dark chocolate chips or dried fruit (like cranberries or goji berries) for extra flavor

Instructions

Mix Dry Ingredients: In a medium-sized mixing bowl, combine the rolled oats, matcha powder, chia seeds, shredded coconut, and sea salt. Stir well to ensure an even distribution of the matcha.

Combine Wet Ingredients: In a separate bowl, mix the almond butter, maple syrup (or honey), and vanilla extract until smooth. If your almond butter is thick, you might want to microwave it for a few seconds to make it easier to combine.

Combine Mixtures: Pour the wet ingredients into the bowl with the dry ingredients. Mix thoroughly until everything is well-combined. If you're adding optional ingredients like chocolate chips or dried fruit, fold them in at this stage.

Form the Bites: Using your hands, scoop out about a tablespoon of the mixture and roll it into a ball. Place the energy bite onto a parchment-lined tray. Repeat until all the mixture is used up.

Chill: Cover the tray with plastic wrap or place it in the refrigerator for at least 30 minutes. This will help the energy bites firm up and hold their shape.

Store: After chilling, you can enjoy them right away or store them in an airtight container in the fridge for up to one week. They can also be frozen for longer storage.
