4 whole wheat tortillas

1 cup shredded mozzarella cheese (or cheese of choice)

1 cup spinach, chopped

1 small bell pepper, diced (any color)

1 medium zucchini, grated

1/2 cup corn kernels (fresh, frozen, or canned)

1 teaspoon olive oil

1 teaspoon taco seasoning (optional)

Salsa or guacamole for dipping

Instructions
 

Prep the Veggies: In a pan, heat the olive oil over medium heat. Add the chopped spinach, diced bell pepper, and grated zucchini. Sauté for 3-4 minutes until the veggies are slightly tender.

    Mix in Corn and Seasoning: Stir in the corn kernels and taco seasoning, mixing well. Cook for another 1-2 minutes until everything is combined and heated through. Remove from heat and let it cool slightly.

      Assemble the Quesadillas: Lay out two tortillas. On each tortilla, sprinkle half of the shredded cheese, followed by half of the sautéed veggie mix. Top with the remaining cheese and then cover with another tortilla.

        Cook the Quesadillas: In the same pan, add a little more olive oil if needed. Place one quesadilla in the pan and cook for about 3-4 minutes on one side, or until golden brown. Carefully flip it over and cook for another 3-4 minutes until the other side is golden and the cheese is melted.

          Cut and Serve: Remove from the pan and let it cool for a minute. Cut into wedges and serve with salsa or guacamole for dipping.
