Ingredients

1 lb ground beef (preferably lean)

2 tbsp soy sauce (low sodium)

1 tbsp oyster sauce (optional for depth of flavor)

1 tbsp sesame oil

1 medium onion, chopped

2 cloves garlic, minced

1 tsp ginger, grated

1 bell pepper (any color), sliced

1 cup broccoli florets

1 cup snap peas

2 medium carrots, julienned

2 green onions, chopped

1 tbsp cornstarch (optional for thickening)

1/4 cup water

Salt and pepper to taste

Cooked brown rice or quinoa for serving

Instructions

Prep the Ingredients: Begin by chopping your veggies: slice the bell pepper, julienne the carrots, and cut the broccoli into florets. Mince the garlic and grate the ginger, then set everything aside.

Cook the Ground Beef: In a large non-stick skillet or wok over medium-high heat, add the ground beef. Cook until browned and fully cooked, breaking it apart with a spatula. Drain any excess fat if necessary.

Sauté Aromatics: Once the beef is cooked, push it to the side of the skillet. In the empty space, add the sesame oil, and sauté the onion, garlic, and ginger for about 2 minutes, or until fragrant.

Add Vegetables: Stir in the bell pepper, broccoli, snap peas, and carrots. Sauté for about 5-7 minutes, until the vegetables are tender-crisp.

Combine and Season: Pour in the soy sauce and oyster sauce, mixing everything together. If you prefer a thicker sauce, mix the cornstarch with the water in a small bowl to create a slurry, then drizzle it into the pan, stirring continuously. Cook for an additional 2-3 minutes until the sauce thickens slightly.

Final Touches: Add salt, pepper, and half of the chopped green onions. Toss everything together to ensure the beef and veggies are well coated.

Serve: Serve the stir fry hot over cooked brown rice or quinoa. Garnish with the remaining green onions for a fresh touch.
