1.5 lbs boneless, skinless chicken breasts, cooked and shredded

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) corn, drained

1 cup diced bell peppers (any color)

1 cup diced red onion

2 cups diced tomatoes (fresh or canned, with juices)

1 tablespoon olive oil

2 tablespoons taco seasoning (store-bought or homemade)

1 cup low-sodium chicken broth

1 cup brown rice (uncooked)

1 cup shredded reduced-fat cheese (optional)

Fresh cilantro, avocado, and lime wedges for garnish (optional)

Salt and pepper to taste

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté the Vegetables: In a large skillet, heat olive oil over medium heat. Add the diced red onion and bell peppers. Sauté for about 5 minutes until softened.

      Combine Ingredients: In a large mixing bowl, combine the cooked, shredded chicken, black beans, corn, sautéed vegetables, diced tomatoes, taco seasoning, chicken broth, and uncooked brown rice. Stir until everything is well incorporated. Season with salt and pepper to taste.

        Transfer to Casserole Dish: Pour the mixture into a greased 9x13 inch casserole dish, spreading it out evenly.

          Cover and Bake: Cover the casserole dish with aluminum foil (to prevent drying) and bake in the preheated oven for 25 minutes.

            Add Cheese (Optional): After 25 minutes, if you’re using cheese, remove the foil and sprinkle the shredded cheese on top. Return to the oven (uncovered) for an additional 10-15 minutes, or until the cheese is melted and bubbly.

              Let It Rest: Once cooked, remove from the oven and allow to sit for about 5 minutes.
