1 lb (450g) lean ground beef

1 can (15 oz) black beans, rinsed and drained

1 medium onion, diced

3 cloves garlic, minced

1 tablespoon olive oil

1 tablespoon taco seasoning (or homemade mix: chili powder, cumin, paprika, garlic powder, onion powder, and salt)

1 cup diced tomatoes (fresh or canned)

1 cup corn kernels (fresh or frozen)

Salt and pepper to taste

Juice of 1 lime

Corn or whole wheat tortillas (8 small)

Optional toppings: avocado slices, fresh cilantro, diced red onion, salsa, shredded lettuce, cheese (for non-dairy, use vegan cheese)

Instructions
 

Cook the Beef: In a large skillet, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing until they are soft and fragrant (about 2-3 minutes).

    Brown the Meat: Add the ground beef to the skillet, breaking it up with a spatula. Cook until it’s browned and cooked through (about 5-7 minutes). Drain any excess fat if necessary.

      Add Flavors: Stir in the taco seasoning, diced tomatoes, corn, and black beans. Mix well and let everything cook together for about 5-7 minutes, allowing the flavors to meld together.

        Season: Taste the mixture and season with salt, pepper, and lime juice as desired. Remove from heat.

          Prepare the Tortillas: Warm the tortillas in a dry skillet for about 30 seconds on each side or wrap them in foil and heat in the oven for about 5-10 minutes.

            Assemble the Tacos: Spoon a generous portion of the beef and black bean mixture onto each tortilla. Top with your choice of avocado, cilantro, red onion, salsa, lettuce, and cheese.
