2 cups rolled oats

1 cup almond butter (natural, no added sugars)

1/4 cup honey or maple syrup

1/2 cup sliced almonds

1/4 cup pumpkin seeds

1/2 cup dried cranberries or raisins

1 tsp vanilla extract

1/2 tsp cinnamon

1/4 tsp sea salt

Optional: 1/4 cup unsweetened coconut flakes

Preheat the Oven: Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper to prevent sticking.

    Mix Wet Ingredients: In a medium bowl, combine the almond butter, honey (or maple syrup), vanilla extract, and cinnamon. Mix well until smooth and creamy.

      Combine the Dry Ingredients: In a large bowl, mix the rolled oats, sliced almonds, pumpkin seeds, sea salt, and coconut flakes (if using) until evenly distributed.

        Combine Wet and Dry Ingredients: Pour the almond butter mixture over the dry ingredients and stir thoroughly until all the oats and nuts are evenly coated.

          Spread and Bake: Spread the granola mixture evenly onto the prepared baking sheet. Use a spatula to flatten it down slightly for an even bake.

            Bake: Place the baking sheet in the preheated oven and bake for 20-25 minutes, stirring halfway through to ensure even browning. Keep an eye on it towards the end to prevent burning; you want it golden and crunchy.

              Add Dried Fruits: After removing the granola from the oven, allow it to cool on the baking sheet. Once cooled, stir in the dried cranberries or raisins.

                Store: Transfer the granola to an airtight container. It will keep for about two weeks, though it's sure to be gone before then!
