Hawaiian Roll French Toast

8 Hawaiian rolls

4 large eggs

1 cup whole milk

1/2 cup coconut milk

1 tsp vanilla extract

1/2 tsp cinnamon

1/4 tsp nutmeg

1 tablespoon brown sugar

1/4 cup crushed pineapple (drained)

2 tablespoons unsalted butter (for cooking)

Maple syrup (for serving)

Toasted coconut flakes (for garnish)

Fresh sliced fruit (like banana or mango, for serving)

Prepare the Bread: Slice each Hawaiian roll in half horizontally. You can also leave them whole for bigger portions, but slicing allows for a crispy exterior and custardy interior.

    Mix the Custard: In a large mixing bowl, whisk together the eggs, whole milk, coconut milk, vanilla extract, cinnamon, nutmeg, and brown sugar until well combined.

      Add Pineapple: Gently fold the crushed pineapple into the egg mixture, incorporating it well for a hint of tropical flavor.
