Ingredients

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1 cup Greek yogurt

1 cup roasted Hatch green chilies, chopped (can be fresh or canned)

1 cup shredded Monterey Jack cheese

1 tablespoon olive oil (for brushing)

Fresh cilantro or parsley, chopped (for garnish)

Optional: sour cream or Greek yogurt for serving

Instructions

Preheat the Oven: Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven to heat.

Make the Dough: In a large bowl, combine the flour, baking powder, and salt. Mix well. Slowly add the Greek yogurt and stir until a dough begins to form.

Knead the Dough: Turn the dough onto a floured surface and knead for about 3-5 minutes until smooth and elastic. If the dough is too sticky, add a little more flour.

Incorporate the Chilies and Cheese: Gently fold in the chopped Hatch chilies and shredded cheese, mixing until evenly distributed throughout the dough.

Roll Out the Flatbreads: Divide the dough into 4 equal portions. On a floured surface, roll out each portion into a 1/4-inch thick oval or circle.

Prepare for Baking: If using a baking sheet, line it with parchment paper. Transfer each rolled flatbread onto the sheet or onto the preheated pizza stone.

Brush with Olive Oil: Brush the tops of the flatbreads lightly with olive oil. This will help them achieve a crispy texture and add flavor.

Bake: Bake in the preheated oven for about 10-12 minutes, or until the edges are golden brown and the cheese is bubbling.

Garnish and Serve: Once done, remove from the oven and let cool for a minute. Sprinkle fresh cilantro or parsley on top. Slice into wedges and serve warm with a side of sour cream or Greek yogurt if desired.

Enjoy: Dive in and enjoy your Spicy Hatch Chili Flatbread as a delicious appetizer or main dish!
