2 cups cooked and shredded chicken breast

1 cup roasted Hatch green chiles, chopped

1 cup cream cheese, softened

1 cup shredded Monterey Jack cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon cumin

½ teaspoon smoked paprika

Salt and pepper to taste

12 small flour tortillas

Vegetable oil (for frying)

Fresh cilantro, chopped (for garnish)

Sour cream (for serving)

Avocado slices (for serving)

Instructions
 

Prepare the Filling: In a large mixing bowl, combine the shredded chicken, chopped Hatch green chiles, softened cream cheese, Monterey Jack cheese, garlic powder, onion powder, cumin, smoked paprika, salt, and pepper. Mix until well combined and creamy.

    Assemble the Taquitos: Take one flour tortilla and place about 2-3 tablespoons of the chicken filling in a line across the center. Roll the tortilla tightly around the filling, tucking in the sides as you go to secure the filling inside. Repeat with all tortillas until the filling is used up.

      Heat the Oil: In a large skillet, add about 1 inch of vegetable oil and heat it over medium heat until it reaches 350°F (175°C).

        Fry the Taquitos: Working in batches, carefully place 3-4 taquitos seam-side down in the hot oil. Fry for about 3-4 minutes until golden brown and crispy, flipping halfway through. Remove and drain on paper towels.

          Serve: Transfer the taquitos to a serving platter. Garnish with freshly chopped cilantro. Serve hot with sour cream and avocado slices on the side.
