Ingredients

2 large flatbreads (naan or pita)

1 pound boneless, skinless chicken breasts

1 cup roasted Hatch green chiles, chopped (canned or fresh)

1 cup shredded Monterey Jack cheese

1/2 cup cream cheese, softened

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon cumin

1 tablespoon olive oil

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Avocado slices (optional, for serving)

Lime wedges (for serving)

Instructions

Prepare the Chicken: Season the chicken breasts with salt, pepper, garlic powder, onion powder, and cumin on both sides. In a skillet, heat olive oil over medium heat. Add the chicken and cook for about 5-7 minutes on each side or until cooked through and no longer pink in the center. Remove from heat and let it rest for a few minutes before slicing into thin strips.

Make the Cheese Mixture: In a mixing bowl, combine the softened cream cheese with half of the shredded Monterey Jack cheese and the chopped Hatch green chiles. Mix until well combined. This will create a flavorful, creamy spread.

Assemble the Flatbreads: Preheat your oven to 400°F (200°C). On a baking sheet, lay out the flatbreads. Spread the cream cheese mixture evenly over each flatbread. Layer the sliced chicken pieces on top of the cheese mixture. Sprinkle the remaining shredded Monterey Jack cheese over the chicken.

Bake the Flatbreads: Place the baking sheet in the preheated oven and bake for 10-12 minutes or until the cheese is melted and bubbly, and the edges of the flatbreads are golden brown.

Garnish and Serve: Remove from the oven, let cool for a minute, then garnish with fresh cilantro and avocado slices if desired. Cut into quarters and serve with lime wedges on the side for an extra burst of flavor!
