500g chicken breast fillets, cut into bite-sized pieces

1 can (400g) pineapple chunks in juice, drained (reserve the juice)

1 tablespoon olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

1 bell pepper (red or yellow), diced

1 tablespoon soy sauce

1 tablespoon honey

1 teaspoon fresh ginger, grated

1 teaspoon paprika

Salt and pepper to taste

Fresh cilantro or parsley for garnish

Cooked rice or quinoa for serving

Instructions
 

Marinate the Chicken:

                    - Let it simmer for about 5-7 minutes, allowing the flavors to meld, stirring occasionally.

                      Adjust Seasoning:

                        - Taste and adjust seasoning with salt, pepper, or a touch more soy sauce if desired.

                          Serve:
