Ingredients

1 cup rolled oats

1 scoop vanilla protein powder

1 teaspoon baking powder

½ teaspoon cinnamon

½ cup unsweetened applesauce

1 cup almond milk (or any milk of choice)

1 tablespoon honey or maple syrup (optional)

1 cup mixed berries (fresh or frozen)

Cooking spray or a little coconut oil for greasing the waffle iron

Instructions

Preheat the Waffle Iron: Start by preheating your waffle iron according to the manufacturer's instructions. This ensures that the waffles cook evenly and become crispy.

Blend the Base: In a blender, combine the rolled oats, vanilla protein powder, baking powder, cinnamon, applesauce, almond milk, and honey or maple syrup (if using). Blend until smooth and creamy. The batter should be thick but pourable. If it's too thick, add a little more almond milk to reach the desired consistency.

Stir in the Berries: Gently fold in the mixed berries into the waffle batter. If using frozen berries, make sure they're slightly thawed to distribute evenly without turning the batter too purple.

Prepare The Waffle Iron: Lightly grease the waffle iron with cooking spray or a small amount of coconut oil to prevent sticking.

Cook the Waffles: Pour an appropriate amount of batter into the center of the preheated waffle iron (usually about ½ to ¾ cup, depending on the size of your iron). Close the lid and cook according to the waffle iron's instructions, typically around 5 minutes. Keep an eye on them; they’re done when golden brown and crispy.

Serve Warm: Carefully remove the waffles from the iron and serve warm. You can top them with additional berries, a dollop of Greek yogurt, or a drizzle of honey or maple syrup if desired.

Store Leftovers: If you have any leftovers, let the waffles cool completely, then store them in an airtight container in the refrigerator for up to 3 days or freeze for up to a month. Reheat in a toaster or oven for a quick breakfast!
