Grilled Zucchini Salad

Ingredients
  

3 medium zucchinis, sliced into 1/4 inch thick rounds

1 red bell pepper, cut into bite-sized pieces

1 cup cherry tomatoes, halved

1/2 red onion, thinly sliced

1/4 cup extra-virgin olive oil

2 tablespoons balsamic vinegar

2 cloves garlic, minced

1 teaspoon dried oregano

Salt and pepper, to taste

1/2 cup crumbled feta cheese (optional)

Fresh basil leaves, for garnish

Instructions
 

Preheat your grill to medium-high heat.

    In a large mixing bowl, combine the sliced zucchinis, red bell pepper, cherry tomatoes, and red onion.

      In a separate small bowl, whisk together the olive oil, balsamic vinegar, minced garlic, dried oregano, salt, and pepper.

        Pour the dressing over the vegetable mixture and toss until well coated.

          Place the vegetables directly on the grill and cook for about 4-5 minutes on each side, or until they have nice grill marks and are tender.

            Once grilled, remove the vegetables from the grill and let them cool a bit.

              Transfer the grilled veggies to a large serving bowl and toss gently. If desired, fold in crumbled feta cheese.

                Garnish the salad with fresh basil leaves and serve warm or at room temperature.
