2 medium zucchinis, sliced into 1/4-inch thick rounds

1 cup cherry tomatoes, halved

8 ounces fresh mozzarella cheese, sliced

1 cup fresh basil leaves

3 tablespoons olive oil

1 tablespoon balsamic vinegar

1 teaspoon sea salt

1/2 teaspoon black pepper

1 teaspoon garlic powder

Optional: Crushed red pepper flakes for garnish

Prepare the Zucchini: Preheat your grill to medium-high heat. In a bowl, toss the zucchini slices with 2 tablespoons of olive oil, garlic powder, sea salt, and black pepper until evenly coated.

    Grill the Zucchini: Place the zucchini slices on the grill and cook for about 3-4 minutes per side, or until grill marks appear and they become tender. Remove from the grill and set aside.

      Prepare the Caprese Stacks: On a serving platter or individual plates, start assembling your stacks. Begin with a slice of grilled zucchini, followed by a slice of fresh mozzarella, a few cherry tomato halves, and a basil leaf.

        Layering: Repeat the layering process until you have 2-3 layers depending on your preferred height. Finish with a slice of zucchini on top.

          Dress the Stacks: In a small bowl, mix the remaining olive oil with balsamic vinegar. Drizzle the dressing over the stacks.

            Garnish: If using, sprinkle crushed red pepper flakes on top for a bit of heat and extra flavor.
