To fully appreciate this dish, it’s essential to understand the cut of meat at its core: beef tenderloin. This prized cut of beef comes from the loin of the cow, specifically from the short loin and sirloin areas. Notably, it is one of the most tender cuts available, making it a favorite among chefs and home cooks alike. The tenderness of beef tenderloin is attributed to the fact that it comes from a muscle that does very little work, resulting in a lean and buttery texture.

Ingredients

1.5 lbs beef tenderloin, trimmed

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and black pepper, to taste

For the Creamy Dill Sauce:

1 cup sour cream

2 tablespoons fresh dill, finely chopped

1 tablespoon lemon juice

1 teaspoon Dijon mustard

1 clove garlic, minced

Salt and black pepper, to taste

Instructions

Prepare the Marinade: In a small bowl, combine the olive oil, garlic powder, onion powder, salt, and black pepper. Rub this mixture all over the beef tenderloin. Let it marinate at room temperature for about 30 minutes while you prepare the sauce.

Make the Creamy Dill Sauce: In another bowl, whisk together the sour cream, fresh dill, lemon juice, Dijon mustard, and minced garlic. Season with salt and black pepper to taste. Cover and refrigerate until ready to serve.

Preheat the Grill: Heat your grill to medium-high heat. If using a charcoal grill, let the coals burn until they're covered with ash.

Grill the Tenderloin: Place the tenderloin on the grill, and sear it for 3-4 minutes on each side until you get nice grill marks. Use a meat thermometer to check for doneness; cook until it reaches an internal temperature of 135°F (57°C) for medium-rare, about 15-20 minutes total, depending on thickness.

Rest the Meat: Once cooked, remove the tenderloin from the grill and let it rest on a cutting board for about 10 minutes. This allows the juices to redistribute, resulting in a more tender and juicy cut.

Slice and Serve: After resting, slice the tenderloin into medallions. Arrange on a platter, drizzle generously with the creamy dill sauce, and serve with your favorite grilled vegetables or roasted potatoes.

Enjoy your Grilled Tenderloin with Creamy Dill Sauce, perfect for a special dinner or gathering!
