Ingredients

For the Grilled Salmon:

4 salmon fillets (about 6 oz each)

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

Juice of 1 lemon

For the Pineapple Salsa:

1 cup fresh pineapple, diced

1/2 red bell pepper, finely chopped

1/4 red onion, finely chopped

1 jalapeño, seeded and minced (optional for heat)

Juice of 1 lime

1/4 cup fresh cilantro, chopped

Salt and pepper to taste

Instructions

Prepare the Marinade: In a small bowl, combine olive oil, garlic powder, paprika, lemon juice, salt, and pepper. Whisk until well combined.

Marinate the Salmon: Place the salmon fillets in a shallow dish and pour the marinade over them. Let the salmon marinate for at least 20 minutes at room temperature or up to 1 hour in the refrigerator.

Make the Pineapple Salsa: In a mixing bowl, combine the diced pineapple, red bell pepper, red onion, jalapeño (if using), lime juice, and chopped cilantro. Season with salt and pepper to taste. Mix well and set aside to allow the flavors to meld.

Preheat the Grill: Preheat your grill to medium-high heat. Lightly oil the grill grates to prevent sticking.

Grill the Salmon: Remove the salmon from the marinade and place the fillets on the grill skin-side down. Grill for about 4-5 minutes per side, or until the salmon is cooked through and has nice grill marks. (Cooking time may vary depending on the thickness of the fillets.)

Serve: Once the salmon is done, transfer it to a serving platter. Top generously with the pineapple salsa. Serve immediately with lime wedges on the side for extra zest.

Enjoy! Pair this delicious grilled salmon with your favorite side, such as rice, quinoa, or a fresh green salad.
