1 pound boneless, skinless chicken breasts, cut into 1-inch cubes

1/4 cup ranch dressing

3 tablespoons olive oil

4 cloves garlic, minced

1/2 cup grated Parmesan cheese

2 teaspoons dried Italian herbs (oregano, basil, thyme)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

8-10 wooden skewers (soaked in water for 30 minutes)

Instructions
 

Marinate the Chicken: In a large bowl, combine the ranch dressing, olive oil, minced garlic, Italian herbs, salt, and pepper. Add the chicken cubes and toss until evenly coated. Cover and marinate in the refrigerator for at least 30 minutes (or up to 2 hours for deeper flavor).

    Prepare Skewers: If using wooden skewers, ensure they have soaked in water for 30 minutes to prevent burning. Preheat your grill to medium-high heat.

      Skewer the Chicken: Thread the marinated chicken cubes onto the soaked skewers, leaving a little space between each piece to allow for even cooking.

        Grill the Skewers: Place the skewers on the preheated grill. Cook for 12-15 minutes, turning occasionally, until the chicken is fully cooked and has nice grill marks (internal temperature should reach 165°F).

          Add Cheese Topping: During the last few minutes of grilling, sprinkle the grated Parmesan cheese over the chicken skewers. Close the grill lid to melt the cheese.

            Serve: Remove the skewers from the grill and let them rest for a couple of minutes. Garnish with freshly chopped parsley before serving.
