Grilled Portobello Mushroom Burgers

4 large Portobello mushrooms, stems removed

¼ cup balsamic vinegar

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon smoked paprika

Salt and pepper to taste

4 whole wheat burger buns

4 slices of fresh mozzarella cheese (optional)

1 cup baby spinach leaves

1 ripe avocado, sliced

1 medium tomato, sliced

½ red onion, thinly sliced

Your favorite condiments (mustard, ketchup, etc.)

Instructions
 

Prepare the Marinade: In a small bowl, whisk together the balsamic vinegar, olive oil, minced garlic, dried oregano, smoked paprika, salt, and pepper.

    Marinate the Mushrooms: Place the Portobello mushrooms in a shallow dish and pour the marinade over them. Ensure each mushroom is well coated and let them marinate for at least 30 minutes, or up to 2 hours for a more robust flavor.

      Preheat the Grill: Preheat your grill to medium-high heat (approximately 375°F/190°C).

        Grill the Mushrooms: Remove the mushrooms from the marinade and place them on the grill, gill side down. Grill for about 5-7 minutes. Flip the mushrooms and grill for an additional 5 minutes, adding a slice of mozzarella on top during the last minute of grilling to melt.

          Toast the Buns: While the mushrooms are grilling, cut the burger buns in half and place them on the grill, cut side down. Toast them until they're golden brown, about 2 minutes.

            Assemble the Burgers: Spread a layer of your favorite condiments on the bottom half of each toasted bun. Place a grilled Portobello mushroom on top, followed by spinach leaves, avocado slices, tomato slices, and red onion. Top with the other half of the bun.

              Serve and Enjoy: Serve the burgers immediately with your favorite side dishes, such as sweet potato fries or a fresh salad.
