Grilled Portobello Burgers

4 large Portobello mushrooms, stems removed

1/4 cup balsamic vinegar

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

4 whole wheat burger buns

4 slices fresh mozzarella cheese (optional)

1 cup baby arugula

1 large tomato, sliced

1 ripe avocado, sliced

Pesto sauce or your favorite condiments (optional)

Instructions
 

Marinate the Mushrooms: In a bowl, whisk together balsamic vinegar, olive oil, minced garlic, oregano, salt, and black pepper. Add the Portobello mushrooms to the marinade, making sure they are well coated. Cover and let them marinate for at least 30 minutes to 1 hour.

    Prepare the Grill: Preheat your grill to medium-high heat. If using a grill pan, place it over medium heat on the stove and allow it to preheat.

      Grill the Mushrooms: Once the grill is hot, carefully place the marinated Portobello mushrooms gill-side down on the grill. Grill for about 5-7 minutes on one side, then flip and grill for another 5-7 minutes until they are tender and well charred.

        Melt the Cheese (Optional): If you’re using mozzarella cheese, add a slice on top of each mushroom during the last 1-2 minutes of grilling, closing the lid to help it melt.

          Toast the Buns: While the mushrooms are grilling, slice the whole wheat burger buns in half and lightly toast them on the grill for about 1-2 minutes until they are golden brown.

            Assemble the Burgers: Place each grilled Portobello mushroom on the bottom half of a toasted bun. Layer with fresh arugula, tomato slices, and avocado. Drizzle with pesto sauce or your favorite condiments, then top with the other half of the bun.

              Serve and Enjoy: Serve your delicious grilled Portobello burgers with a side of sweet potato fries or a mixed salad for a satisfying meal.
